from Judy Minium – Feb 2018 meeting

10 oreo cookies, finely crushed

1 Tablespoon butter, melted

16 oz cream cheese, softened

1/2 cup sugar

1/4 cub unsweetened cocoa powder

2 eggs

Heat oven to 325

Combine cookie crumbs and butter; press onto bottom of 24-30 paper-lined mini-muffin tins.  Bake 8 minutes

Beat cream cheese, sugar, and cocoa in medium bowl until blended.  Add eggs one at a time, mixing at low speed, just until blended.  Spoon over crusts.

Bake 20 minutes or until centers are almost set. (test with toothpick)  Cool completely.  Refrigerate 2 hours  (these freeze well)

Before serving top each one with a dollop of white frosting or whipped cream.  It makes them look better. (Optional additions in photo: add marshmallows and crushed candy cane.)
